Our 8-Day Journey Through Ireland!

Day 1: Arrival and Whiskey Welcome

After an early morning flight and a layover in NYC, we finally touched down in Ireland this morning! Navigating the airport was a breeze, and our driver was waiting for us right outside. We planned ahead by booking our hotel for the night prior, which turned out to be a brilliant move—we were able to check in immediately.


The hotel staff was incredibly accommodating, even holding breakfast for us so we wouldn’t miss our first Irish meal. After a quick nap to recharge, we kicked off our adventure at the Jameson Distillery. From the warm welcome drink to learning the history of this iconic whiskey, the experience was unforgettable (not to mention the tasting!). Dinner was so good—a cozy spot with some great flatbread. With jet lag settling in, we called it an early night, excited for what tomorrow would bring.



Day 2: Dublin’s Treasures and Guinness Magic

Our second day in Dublin was packed with history and wonder. We started at Trinity College, marveling at The Book of Kells and the enchanting Long Room Library. It’s hard to put into words how awe-inspiring those towering shelves of centuries-old books were—I even picked up a few souvenirs to commemorate the experience.


Next, we visited the iconic Molly Malone statue, a Dublin must-see. The highlight of the day, however, was the Guinness Storehouse. The tour brought the history of Ireland’s most famous stout to life, complete with a taste-testing session and a pint personalized with our photos on the foam! We wrapped up the day at the Gravity Bar, taking in panoramic views of Dublin with a pint in hand. Sláinte to a perfect day!




Days 3 & 4: A Bit of Relaxation and Christmas Charm

Day 3 was a slower pace but just as beautiful. After moving hotels, we explored a quaint café with amazing brown bread, got some work done, and joined our group for dinner.


Day 4 was magical from start to finish. We began with a Globus City Tour, stopping at landmarks like Christchurch, St. Patrick’s Cathedral, and the Remembrance Garden. Hearing the cathedral bells ring was such a moving moment. Later, we wandered O’Connell Street, admired the Christmas window displays, and indulged in mouthwatering fish and chips at Beshoff’s.


The day ended at the iconic Temple Bar, which was decked out in Christmas decor. Enjoying live music inside felt like a scene straight out of a postcard. As we walked back to our hotel in the rain—“Irish water,” as I like to call it—I couldn’t help but feel grateful for every moment.




Day 5: Cliffs of Moher and Medieval Feasts

Our journey took us to Galway, where charming streets and Krispy Kreme (yes, even in Ireland!) greeted us. The famous Cliffs of Moher were next, cloaked in dramatic fog and rain. A fierce gust of wind claimed my umbrella, sending it soaring over the cliffs—leaving a piece of me in Ireland forever.


The day ended in Ennis, where we attended a medieval-style banquet at Bunratty Castle. Eating with our hands, sipping soup from bowls, and listening to bagpipes under the castle’s shadow was an experience I’ll never forget.




Day 6: The Ring of Kerry and Sweet Treats

Today’s journey around the Ring of Kerry was nothing short of breathtaking. Kevin, our guide, shared fascinating tales as we soaked in the scenery of lush green landscapes and rugged coastlines. A double rainbow greeted us—a true Irish blessing!


Lunch at Dooley’s in Waterville was as warm and comforting as the views. The day ended in Kilkenny, where we indulged in the famous Murphy’s Ice Cream. My pick? Chocolate Whiskey. Delicious doesn’t even begin to describe it.




Day 7: Castles and Christmas Cheer

Climbing the narrow, winding steps of Blarney Castle was an adventure in itself. While I didn’t kiss the Blarney Stone, the views from the top were worth every step. A visit to the House of Waterford Crystal followed, where the craftsmanship left me speechless.


Our hotel was a winter wonderland, complete with festive decor that felt straight out of a holiday movie. Though the Waterford Christmas Market wasn’t fully open, the spirit of the season was alive and well.




Day 8: Snow-Kissed Kilkenny and Farewell to IrelandAs we arrived in Kilkenny, snow began to fall, transforming the charming town into a scene from a dream. For someone from Arizona, it was pure magic. After exploring the Black Abbey and St. Mary’s Cathedral, we enjoyed a cozy coffee break before heading back to Dublin.


The trip ended with some last-minute shopping on O’Connell Street and a final toast to an unforgettable adventure!



Ireland has truly captured my heart. From its welcoming people to its breathtaking landscapes, every moment has been filled with magic and wonder. I’ll cherish these memories forever and can’t wait to return someday.
